Aam Panna - A Cool Summer Drink

To beat the searing heat of north India in the summers what you need is 'Aam Panna' - a cooling drink made with raw mangoes........
Beats the heat like nothing else......drink this when you come in from the sun. This is said to beat the ill-effects of  'loo' - the strong, hot and dry summer wind that blows over all of north India.
Here's how you can do it ......
Cook 4-5 raw mangoes in the pressure cooker for 3-4 minutes. (Before this wash well and put 1-2 cuts on the skin so it doesn't explode in the cooker.
Let cool a little till you can handle it easily without burning your hands. take the peel out along with the seed so you are left with the cooked pulp.
Pass it through a large gauge sieve or just churn in the mixer.
To this add sugar, salt and roasted cumin powder according to taste. I like to add a little bit of red chilly powder too. Water it down to how thin you like to drink it.
Chill well.Garnish with mint leaves before serving.
The thicker version can also be eaten with lunch like you would eat a 'raita'.

Have a cool summer!!
